Ingredients

  • 4 medium fresh beets
  • 100 grams feta cheese
  • 3 tablespoons olive oil

  • 2 tablespoons fresh parsley
  • 50 grams walnuts

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and trim the beet tops and roots. Wrap each beet individually in aluminum foil and place them on a baking sheet.

Roast the beets in the oven for 40-45 minutes, or until they are fork-tender.

While the beets are roasting, prepare the dressing by whisking together the olive oil, lemon juice, honey, salt, and black pepper in a small bowl.
