  • 3 carrots, peeled and cut into 1-inch pieces
  • 4 small potatoes, cut into quarters
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

In a large tagine or heavy-bottomed pot, heat the olive oil over medium-high heat.

Step 2

Add the beef pieces in batches to brown on all sides. Remove and set aside once browned.

In the same pot, add the chopped onion and sauté until softened, about 5 minutes.
