Ingredients

  • 12 oz Rotini pasta
  • 1 lb Beef sirloin steak
  • 2 tbsp Olive oil
  • 2 Garlic cloves, minced
  • 1 cup Cherry tomatoes, halved
  • 1 Red bell pepper, diced
  • 1 Cucumber, diced
  • 0.25 cup Fresh basil leaves, chopped
  • 0.25 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Tomato paste
  • 2 tbsp Red wine vinegar
  • 1 tsp Honey
  • 1 tsp Dried oregano
  • 2 tbsp Water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside to cool.

Step 2

While the pasta cooks, prepare the beef. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the sirloin steak with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

Sear the steak for 4-5 minutes per side, or until it reaches your desired level of doneness (135°F for medium-rare). Remove from the skillet and let rest for 5 minutes before slicing into thin strips.

To prepare the tomato basil dressing, whisk together the tomato paste, red wine vinegar, 1 tablespoon of olive oil, honey, dried oregano, water, and the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper in a small bowl. Set aside.
