Ingredients

  • 450 grams beef sirloin
  • 4 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 3 tablespoons vegetable oil
  • 250 grams white mushrooms
  • 1 medium onion
  • 3 garlic cloves
  • 1 teaspoon ginger
  • 250 milliliters beef broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 300 grams egg noodles
  • 3 scallions (green onions)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Slice the beef sirloin thinly against the grain into strips.

Step 2

In a medium bowl, combine the soy sauce and cornstarch. Add the beef and toss to coat. Let it marinate for 10 minutes.

Step 3

Clean and slice the mushrooms. Finely chop the onion. Mince the garlic and grate the ginger. Set all prepared ingredients aside.

Step 4

Cook the egg noodles according to the package instructions. Drain, rinse under cold water, and set aside.

Step 5

Heat 1 tablespoon of the vegetable oil in a large wok or skillet over medium-high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned but not fully cooked. Remove the beef from the pan and set aside.

Step 6

In the same pan, add another tablespoon of oil. Sauté the onions until softened, about 3 minutes. Add the garlic, ginger, and mushrooms. Stir-fry for 5 minutes, or until the mushrooms have released their moisture and begun to brown.

Step 7

Return the beef to the pan along with the beef broth, oyster sauce, hoisin sauce, sesame oil, salt, and pepper. Stir to combine and let simmer for 3 minutes.

Step 8

Add the cooked noodles and the remaining tablespoon of oil to the pan. Toss everything together to coat the noodles in the sauce and cook for 2-3 minutes until heated through.

Step 9

Top with thinly sliced scallions before serving.
