Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 medium carrot, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 500 grams ground beef
  • 2 tablespoons tomato paste
  • 1 cup beef stock
  • 2 tablespoons Worcestershire sauce
  • 1 cup frozen peas
  • 1 teaspoon thyme leaves
  • 1 teaspoon rosemary, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 kilogram potatoes, peeled and quartered
  • 50 grams butter
  • 0.5 cup milk
  • 100 grams cheddar cheese, grated

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

In a large pan, heat the olive oil over medium heat. Add the onion, carrot, and celery, cooking until soft, about 5-7 minutes.

Step 3

Add the minced garlic and cook for another minute until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a spoon, until browned, approximately 8-10 minutes.

Step 5

Stir in the tomato paste, beef stock, and Worcestershire sauce. Bring to a simmer and add the peas, thyme, rosemary, salt, and pepper. Let it simmer gently for 15-20 minutes until the sauce thickens slightly.

Meanwhile, place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

Step 7

Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.

Spread the beef mixture evenly in a baking dish. Spoon the mashed potatoes over the top, smoothing with a spatula.

Sprinkle the grated cheddar cheese over the mashed potatoes.
