Ingredients

  • 1.5 pounds beef stew meat
  • 3 cups frozen hash browns
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 0.5 cup beef broth
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Add the beef stew meat to the skillet and sear on all sides until browned. This should take about 5 minutes. Remove from heat and set aside.

Step 3

In a medium-sized mixing bowl, combine the cream of mushroom soup, sour cream, beef broth, garlic, salt, black pepper, paprika, and dried thyme. Stir until well combined.

Step 4

In the bottom of the crock pot, spread an even layer of frozen hash browns (about 3 cups).

Step 5

Layer the seared beef stew meat over the hash browns.

Step 6

Top the beef with the diced onion.

Step 7

Pour the creamy mixture over the beef and onions, ensuring everything is evenly coated.

Step 8

Cover and cook on low heat for 6 hours, or until the beef is tender.

Step 9

About 20 minutes before serving, sprinkle shredded cheddar cheese on top and re-cover to allow the cheese to melt.

Step 10

Serve hot, optionally garnished with fresh parsley, and enjoy!
