  • 2 tablespoons Olive oil
  • 1 pound Beef stew meat, cut into 1-inch cubes
  • 1 large Yellow onion, diced
  • 3 Garlic cloves, minced
  • 2 medium Carrot, sliced
  • 2 Celery stalks, sliced
  • 6 cups Beef broth
  • 1 15-ounce can Canned diced tomatoes
  • 1 cup Dried black-eyed peas, rinsed and drained
  • 1 Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the beef and brown on all sides, about 5 minutes. Remove the beef from the pot and set aside.

In the same pot, add the diced onion and cook for 3-4 minutes until softened.

Stir in the minced garlic, cooking for another 30 seconds until fragrant.
