Ingredients

  • 1 pound Beef stew meat
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 cups Carrots
  • 1 cup Celery
  • 1 medium Onion
  • 3 cloves Garlic cloves
  • 8 ounces Cremini mushrooms
  • 0.75 cups Pearl barley
  • 8 cups Beef broth
  • 1 whole Bay leaf
  • 2 sprigs Fresh thyme
  • 2 tablespoons Fresh parsley

Directions

Step 1

Season the beef stew meat with salt and black pepper.

Heat olive oil in a skillet over medium-high heat. Sear the beef until browned on all sides, about 5 minutes. Transfer the beef to the crock pot.

Peel and chop the carrots and onion. Dice the celery. Mince the garlic. Slice the cremini mushrooms.
