Ingredients

  • 250 grams All-purpose flour
  • 50 grams Granulated sugar
  • 150 grams Unsalted butter (cold and cubed)
  • 3 tablespoons Cold water
  • 300 grams Blackberry jam
  • 1 large Egg (for egg wash)
  • 1 tablespoon Milk (for egg wash)
  • 2 tablespoons Coarse sugar (optional, for topping)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and granulated sugar.

Step 2

Add the cold, cubed unsalted butter to the bowl. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Step 3

Gradually add the cold water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overwork the dough.

Step 4

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

On a lightly floured surface, roll out the chilled dough into a circle approximately 12 inches in diameter.

Step 7

Transfer the rolled dough to a 9-inch pie dish, pressing it gently into the bottom and sides of the dish. Trim any excess dough around the edges.

Step 8

Spread the blackberry jam evenly over the base of the crust.

Step 9

If desired, roll out the trimmed dough to create a lattice top or decorative shapes to place over the jam layer.

Step 10

In a small bowl, whisk together the egg and milk to make the egg wash.

Step 11

Brush the egg wash over the crust edges and any decorative top pieces. Sprinkle with coarse sugar if desired.

Step 12

Bake the pie in the preheated oven for 35–40 minutes, or until the crust is golden brown and the jam is bubbling slightly.

Step 13

Allow the pie to cool for at least 30 minutes before slicing and serving. The jam filling will thicken further as it cools.

Step 14

Serve alongside whipped cream or vanilla ice cream for an extra special treat.
