Ingredients

  • 1 cup Cottage cheese
  • 0.5 cup All-purpose flour
  • 0.25 cup Milk
  • 3 pieces Large eggs
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Butter (for cooking)
  • 1 pinch Pinch of salt
  • 0 Maple syrup or powdered sugar (optional, for serving)

Directions

Step 1

In a large bowl, whisk together the cottage cheese, eggs, milk, sugar, and vanilla extract until well combined.

Step 2

In a separate bowl, sift together the flour, baking powder, and a pinch of salt.

Step 3

Gradually add the dry ingredients to the wet ingredients, stirring gently until just incorporated. Do not overmix; the batter will be slightly lumpy because of the cottage cheese.

Step 4

Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter to coat the surface.

Step 5

Scoop about 1/4 cup of pancake batter onto the skillet for each pancake. Spread gently with the back of a spoon if needed to get an even thickness.

Step 6

Cook for 2-3 minutes on the first side, or until bubbles form on the surface and the edges appear set. Flip carefully and cook for an additional 2 minutes on the other side until golden brown and cooked through.

Step 7

Repeat with the remaining batter, adding more butter to the skillet as needed.

Step 8

Serve the pancakes warm with maple syrup, powdered sugar, or your favorite fresh fruits on top. Enjoy!
