Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 14.5 ounces diced tomatoes (with juice)
  • 8 ounces tomato sauce
  • 15 ounces black beans, drained and rinsed
  • 15 ounces pinto beans, drained and rinsed
  • 15 ounces corn, drained
  • 2 cups beef broth
  • 2 tablespoons taco seasoning
  • 1 tablespoon ranch seasoning mix
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cups shredded cheddar cheese (optional, for topping)
  • 0.25 cups sour cream (optional, for topping)
  • 1 handful tortilla chips (optional, for topping)

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and minced garlic. Sauté for 3-4 minutes, or until the onion is translucent.

Step 3

Add the ground beef to the pot and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat if necessary.

Step 4

Stir in the taco seasoning, ranch seasoning mix, salt, and black pepper, coating the beef evenly.

Step 5

Add the diced tomatoes (with their juice), tomato sauce, black beans, pinto beans, corn, and beef broth. Stir to combine.

Step 6

Bring the soup to a gentle boil, then reduce the heat to low. Simmer for 20 minutes, stirring occasionally, to allow the flavors to meld.

Step 7

Taste and adjust the seasoning if needed.

Step 8

Serve the taco soup hot, topped with shredded cheddar cheese, sour cream, and a handful of tortilla chips, if desired.
