Ingredients

  • 10 pieces Large eggs
  • 1 cup Milk
  • 1 pound Ground breakfast sausage (spicy or mild)
  • 1 4-ounce can Diced green chiles (canned)
  • 2 cups Shredded cheddar cheese
  • 3 cups Diced frozen hash brown potatoes
  • 4 stalks Green onions, chopped
  • 0.25 cup Cilantro, chopped
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 piece Fresh jalapeño, diced (optional)
  • 1 serving Non-stick cooking spray or butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with non-stick cooking spray or butter and set aside.

Step 2

In a large skillet over medium heat, cook the ground breakfast sausage, breaking it apart with a spatula, until fully browned and cooked through. Drain any excess grease and set aside.

Step 3

In a large mixing bowl, whisk together the eggs, milk, chili powder, cumin, garlic powder, salt, and black pepper until well combined.

Step 4

Add the hash brown potatoes, cooked sausage, diced green chiles, shredded cheddar cheese, green onions, and cilantro to the mixing bowl. Stir everything together until evenly mixed.

Step 5

If using diced jalapeño for extra heat, stir it into the mixture at this point.

Step 6

Pour the mixture into the prepared casserole dish and spread it out evenly.

Step 7

Place the casserole in the preheated oven and bake for 40-45 minutes, or until the center is set and the top is golden brown.

Step 8

Remove from the oven and allow the casserole to cool for 5-10 minutes before slicing and serving.

Step 9

Garnish with additional cilantro, green onions, or a dollop of sour cream if desired.
