Ingredients

  • 1.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground ginger
  • 0.25 teaspoon Salt
  • 0.75 cup Canned pumpkin puree
  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoons Unsalted butter, melted
  • 1 as needed Vegetable oil or butter (for greasing the pan)

Directions

Step 1

In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.

Step 2

In a separate medium bowl, whisk together the pumpkin puree, milk, egg, and melted butter until smooth.

Step 3

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; the batter should be slightly lumpy but no dry flour should remain.

Step 4

Heat a large non-stick skillet or griddle over medium heat and lightly grease with vegetable oil or butter.

Step 5

Using a 1/4-cup measure, pour the batter onto the skillet, spacing the pancakes a few inches apart.

Step 6

Cook the pancakes until bubbles form on the surface and the edges look set, about 2-3 minutes.

Step 7

Carefully flip the pancakes with a spatula and cook the other side until golden brown, about 1-2 minutes more.

Step 8

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 9

Serve warm with your favorite toppings such as maple syrup, whipped cream, chopped nuts, or a sprinkle of cinnamon.
