Ingredients

  • 2 cups Vital wheat gluten
  • 0.25 cup Nutritional yeast
  • 2 teaspoons Poultry seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.75 cup Vegetable broth (for dough)
  • 2 tablespoons Soy sauce (for dough)
  • 8 cups Water (for broth)
  • 4 cups Vegetable broth (for simmering)
  • 2 tablespoons Soy sauce (for simmering)
  • 1 Bay leaf

Directions

Step 1

In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, poultry seasoning, garlic powder, onion powder, and salt. Mix until well combined.

Step 2

In a separate bowl, whisk together 3/4 cup of vegetable broth and 2 tablespoons of soy sauce.

Step 3

Pour the wet ingredients into the dry ingredients, mixing with a spoon until a dough starts to come together.

Step 4

Knead the dough with your hands for about 2-3 minutes until it becomes elastic and firm.

Step 5

Shape the dough into a large log or divide it into smaller chunks, depending on your preference.

Step 6

In a large pot, combine 8 cups of water, 4 cups of vegetable broth, 2 tablespoons of soy sauce, and a bay leaf. Bring to a low simmer.

Step 7

Reduce the heat to low and gently add the seitan pieces to the simmering broth, ensuring they are fully submerged.

Step 8

Cover the pot and let the seitan simmer for about 1 hour, flipping occasionally to ensure even cooking. Do not let the broth boil, as this can result in a spongy texture.

Step 9

Once cooked, remove the seitan from the broth and let it cool slightly. You can slice, shred, or cube the seitan for use in your favorite recipes.

Step 10

Store leftover seitan in an airtight container, submerged in a little of the broth, in the refrigerator for up to 5 days or freeze for longer storage.
