Ingredients

  • 1 pound sweet Italian sausage
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 14.5 ounces diced tomatoes (canned)
  • 1 cup chicken broth
  • 15 ounces cannellini beans (canned, rinsed and drained)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat a large skillet or Dutch oven over medium heat. Add the olive oil.

Step 2

Brown the sweet Italian sausage, breaking it into small pieces with a wooden spoon, for about 5-7 minutes or until fully cooked. Remove the sausage from the pan and set aside.

Step 3

In the same pan, add the diced yellow onion and cook for 3-4 minutes until softened.

Step 4

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Stir in the canned diced tomatoes (with their juices) and chicken broth, scraping up any brown bits from the bottom of the pan for extra flavor.

Step 6

Add the rinsed and drained cannellini beans, cooked sausage, dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper to the pan. Stir to combine.

Step 7

Bring the mixture to a gentle simmer and cook for 15 minutes, allowing the flavors to meld together.

Step 8

Taste and adjust seasoning, adding more salt or pepper if necessary.

Step 9

Serve hot, garnished with chopped fresh parsley, and enjoy!
