Ingredients

  • 4 pieces large flour tortillas
  • 15 ounces canned refried beans
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup salsa
  • 0.5 cup sour cream
  • 0.25 cup fresh cilantro, chopped
  • 1 piece avocado, sliced
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon olive oil

Directions

Step 1

Warm the flour tortillas in a large skillet over medium heat for about 30 seconds on each side, or wrap them in aluminum foil and heat in a preheated oven at 350°F (175°C) for 5 minutes.

Step 2

In a medium saucepan, heat the olive oil over medium heat. Add the refried beans and stir in the salt and ground black pepper. Cook for about 5 minutes, until the beans are heated through, stirring occasionally.

Evenly spread about 1/4 of the warm refried beans down the center of each tortilla.
