  • 2 pounds Pork belly
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 2 tablespoons Brown sugar
  • 2 tablespoons Olive oil
  • 1 cup Apple cider vinegar
  • 1 cup Ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Honey
  • 1 teaspoon Smoked paprika

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the pork belly dry with paper towels. With a sharp knife, score the skin of the pork belly in a crosshatch pattern, cutting just into the fat and not the meat.

Step 3

In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and brown sugar to create a rub.

Step 4

Rub the olive oil all over the pork belly, then evenly coat it with the prepared seasoning rub.

Step 5

Place the pork belly on a rack set over a roasting pan. Pour 1/2 cup of water into the pan to keep the meat moist during cooking.

Roast the pork belly in the preheated oven for about 2 hours, or until it becomes tender.

While the pork belly is roasting, prepare the BBQ sauce. In a medium saucepan over medium heat, combine apple cider vinegar, ketchup, Worcestershire sauce, honey, and smoked paprika. Stir well and bring to a simmer.

Reduce the heat to low and simmer the sauce for about 15 minutes, or until it thickens slightly.

After 2 hours, remove the pork belly from the oven and increase the temperature to 425°F (220°C).

Brush a generous amount of BBQ sauce over the pork belly.

Return the pork belly to the oven and roast for an additional 30-45 minutes, or until the skin is crispy and caramelized, basting with more BBQ sauce halfway through.

Step 12

Allow the pork belly to rest for 10 minutes before slicing. Serve warm with extra BBQ sauce on the side.
