Ingredients

  • 4 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1.5 cups Warm water
  • 2 tablespoons Sugar
  • 1 teaspoon Kosher salt
  • 2 tablespoons Unsalted butter, melted
  • 0.66 cup Baking soda
  • 10 cups Water for boiling
  • 2 tablespoons Coarse sea salt (for topping)
  • 1 Egg yolk, beaten with 1 tablespoon water (optional, for egg wash)

Directions

Step 1

In a large mixing bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5 minutes until the mixture becomes foamy.

Add flour, kosher salt, and melted butter to the yeast mixture. Using a stand mixer fitted with a dough hook, mix on low speed until well combined.

Increase to medium speed and knead the dough for about 5-7 minutes until smooth and elastic.

Transfer the dough to a lightly oiled bowl, cover with plastic wrap or a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
