Ingredients

  • 4 medium potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon red chili flakes
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large garlic cloves
  • 1 tablespoon lemon juice
  • 0.5 cup fresh cilantro
  • 1 small green chili

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Wash and peel the potatoes. Cut them into 1-inch cubes.

Step 3

Place the potato cubes in a large bowl. Add olive oil, red chili flakes, cumin powder, salt, and black pepper. Toss to coat the potatoes evenly.

Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, turning halfway through, until the potatoes are crispy and golden brown.

While the potatoes are roasting, peel and finely chop the garlic cloves. Finely chop the green chili and set aside.
