Ingredients

  • 2 pounds Baby Yukon Gold potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 slices Bacon, cooked and crumbled
  • 1.5 cups Fontina cheese, grated
  • 0.25 cup Fresh basil leaves, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2

Wash the baby Yukon Gold potatoes and cut them into quarters. If the potatoes are very small, you can halve them instead.

Step 3

In a large mixing bowl, toss the potatoes with olive oil, garlic powder, salt, and black pepper until evenly coated.

Step 4

Spread the potatoes out in a single layer on the prepared baking sheet. Roast in the preheated oven for 30-35 minutes, stirring halfway through, until the potatoes are golden brown and crispy on the outside.

Step 5

While the potatoes are roasting, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to cool, then crumble the bacon into small pieces.

Step 6

When the potatoes are done roasting, remove the baking sheet from the oven. Sprinkle the grated fontina cheese evenly over the hot potatoes, followed by the crumbled bacon.

Step 7

Return the baking sheet to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 8

Transfer the potatoes to a serving dish and sprinkle the chopped fresh basil over the top. Serve immediately while warm and enjoy!
