Ingredients

  • 6 large ripe tomatoes
  • 1.5 cups fresh white breadcrumbs
  • 2 teaspoons minced garlic
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons minced fresh basil
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup extra virgin olive oil

Directions

Step 1

Preheat your oven to 400°F (205°C).

Step 2

Slice the tops off the tomatoes and scoop out the seeds and pulp using a small spoon, being careful not to break the tomato shells.

Step 3

Sprinkle the inside of each hollowed-out tomato with a pinch of salt and turn them upside down on a plate to drain while you prepare the filling.

In a medium-sized mixing bowl, combine the breadcrumbs, garlic, parsley, basil, salt, black pepper, and olive oil. Mix well until the crumbs are evenly moistened with the olive oil.

Place the tomatoes in an ovenproof baking dish, cut side up.
