Ingredients

  • 4 pieces fish fillets (such as salmon, cod, or trout)
  • 1 whole lemon, thinly sliced
  • 4 cloves garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 4 sheets aluminum foil

Directions

Step 1

Preheat your barbecue or grill to medium-high heat.

Step 2

Cut 4 large sheets of aluminum foil, each large enough to fully wrap one fish fillet with room to fold the edges securely.

Step 3

Pat the fish fillets dry with paper towels. Season each fillet with salt, black pepper, and red pepper flakes (if using).

Step 4

Place each fillet in the center of a sheet of foil. Drizzle 1/2 tablespoon of olive oil over each fillet.

Step 5

Top each fish fillet with a few thin slices of lemon, a minced garlic clove, and a sprinkle of chopped parsley.

Step 6

Fold the sides of the foil up and over the fish to create a sealed packet. Ensure that the edges are tightly crimped to prevent any juices from leaking.

Step 7

Place the foil packets on the barbecue grill, seam-side up, and cook for 12-15 minutes, depending on the thickness of the fillets. The fish is done when it flakes easily with a fork.

Step 8

Remove the packets from the grill using tongs and allow them to rest for 2 minutes before carefully opening the foil to avoid steam burns.

Step 9

Serve the fish directly from the packets or transfer to a plate. Optionally garnish with additional parsley and lemon wedges.
