Ingredients

  • 4 ears corn on the cob
  • 8 tablespoons unsalted butter
  • 1 garlic bulb
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)
  • 2 tablespoons grated Parmesan cheese (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and your grill to medium heat.

Step 2

Prepare the roasted garlic: Chop the top off the garlic bulb to expose the cloves slightly. Place the bulb on a small piece of foil, drizzle it with olive oil, and wrap it tightly in the foil.

Step 3

Roast the garlic in the oven for 30 minutes or until the cloves are golden and softened. Remove from the oven and let it cool slightly.

Step 4

While the garlic is roasting, prepare the corn: Remove the husks and silks from each ear of corn. Rinse the corn under cold water and pat dry.

Step 5

Place the corn on the grill, turning every couple of minutes, until the kernels develop grill marks and a smoky aroma, about 10-12 minutes.

Step 6

Make the garlic butter: Squeeze the roasted garlic cloves into a small bowl. Mash them with a fork until smooth. Add the softened butter, salt, and black pepper, and mix until well combined.

Step 7

Once the corn is grilled, generously brush or spread the roasted garlic butter over each ear while still warm.

Step 8

For an extra burst of flavor, sprinkle with chopped parsley and grated Parmesan cheese, if desired.

Step 9

Serve immediately and enjoy with your favorite BBQ dishes!
