Ingredients

  • 1.5 lbs Baby potatoes (or small red/yellow potatoes)
  • 2 tbsp Olive oil
  • 0.5 cup Barbecue sauce
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) or prepare your grill to medium heat.

Step 2

Thoroughly wash and dry the potatoes. If using larger potatoes, cut them into quarters or bite-sized pieces. Baby potatoes can be left whole.

Step 3

In a large mixing bowl, combine olive oil, barbecue sauce, garlic powder, paprika, salt, and black pepper. Stir to create a well-mixed marinade.

Step 4

Add the potatoes to the bowl and toss until all potatoes are evenly coated with the marinade.

Step 5

To cook in the oven: Line a baking sheet with parchment paper or foil for easy cleanup. Spread the potatoes in a single layer on the baking sheet. Roast for 20-25 minutes, tossing halfway through, until the potatoes are golden and fork-tender.

Step 6

To cook on the grill: Place the coated potatoes in a grill-safe pan or wrap them tightly in aluminum foil to create a packet. Grill for 20-25 minutes, turning once or twice, until the potatoes are tender and slightly charred.

Step 7

Once cooked, transfer the potatoes to a serving plate and sprinkle with fresh parsley for garnish.

Step 8

Serve hot and enjoy as a side dish with your favorite grilled meats or main course.
