Ingredients

  • 6 pieces Roma tomatoes
  • 2 pieces Fresh jalapeños
  • 1 medium Red onion
  • 0.5 bunch Fresh cilantro
  • 3 pieces Garlic cloves
  • 1 large Lime
  • 1 teaspoon Salt
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Smoked paprika
  • 1 tablespoon Olive oil
  • 1 piece Optional habanero pepper

Directions

Step 1

Preheat your oven's broiler to high and prepare a baking sheet by lining it with foil.

Step 2

Cut the Roma tomatoes and jalapeños in half lengthwise, and place them on the baking sheet cut-side down.

Step 3

Peel and slice the red onion into thick wedges and add them to the baking sheet, along with the unpeeled garlic cloves.

Step 4

Drizzle the olive oil evenly over the vegetables, then broil for 8-10 minutes or until the tomato skins start to blister and the vegetables are slightly charred.

Step 5

Remove the baking sheet from the oven and let the vegetables cool for a few minutes. Peel the garlic cloves as they cool.

Step 6

In a blender or food processor, combine the roasted tomatoes, jalapeños, onion, and peeled garlic.

Step 7

Add the fresh cilantro leaves (stems removed), juice of the lime, salt, cumin, and smoked paprika. If you want extra heat, add the optional habanero pepper at this stage.

Step 8

Blend the ingredients until you achieve your desired consistency—some prefer chunky salsa, while others like it smooth.

Step 9

Taste and adjust seasoning if needed, adding more lime juice or salt to your preference.

Step 10

Transfer the salsa to a serving bowl or jar. Allow it to cool completely and let the flavors meld for at least 30 minutes in the refrigerator before serving.

Step 11

Serve with tortilla chips or use as a topping for tacos, grilled meats, or eggs. Enjoy!
