Ingredients

  • 4 cups vegetable stock
  • 0.5 cup heavy cream
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon paprika
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 2 tablespoons, chopped (optional garnish) fresh parsley

Directions

Step 1

In a large pot, heat the unsalted butter and olive oil over medium heat until the butter is melted.

Add the diced onion and chopped celery to the pot. Sauté for 5 minutes or until softened.

Stir in the minced garlic and cook for 1 minute until fragrant.
