  • 2 cans Chipotle peppers in adobo sauce

  • 2 teaspoons Dried oregano
  • 0.5 teaspoon Ground cloves
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 3 Bay leaves
  • 8 Large flour tortillas
  • 4 cups Cooked white rice
  • 2 cups Black beans
  • 2 cups Shredded cheese (cheddar or Mexican blend)
  • 1 cup Chopped cilantro
  • 1 cup Diced tomato
  • 1 cup Sour cream
  • 2 Sliced avocado

Directions

Step 1

Begin by cutting the beef chuck roast into large chunks, approximately 3-4 inches in size.

Place the beef chunks into a slow cooker.

In a blender, combine chipotle peppers, beef broth, lime juice, apple cider vinegar, garlic cloves, cumin, oregano, ground cloves, salt, and black pepper. Blend until smooth.
