  • 150 ml Milk
  • 20 ml Vegetable oil
  • 2 pieces Chicken thighs, boneless
  • 240 ml Buttermilk
  • 5 g Paprika
  • 5 g Garlic powder
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 200 g All-purpose flour for coating
  • 100 g Cabbage, shredded
  • 1 large Carrot, julienned
  • 1 small Cucumber, sliced
  • 2 tbsp Soy sauce
  • 1 tbsp White vinegar
  • 60 g Mayonnaise
  • 2 tbsp Cilantro, chopped

Directions

Step 1

In a mixing bowl, combine 250g all-purpose flour, 30g sugar, and 4g instant yeast. Add 150ml warm milk and 20ml vegetable oil, then mix until a dough forms.

Step 2

Knead the dough for about 8-10 minutes until smooth and elastic. Cover with a damp cloth and let rise in a warm place for 1 hour or until doubled in size.

Step 3

While the dough is proofing, marinate the chicken thighs in a mixture of 240ml buttermilk, 5g paprika, 5g garlic powder, 1 tsp salt, and 1 tsp black pepper for at least 30 minutes.

Prepare the vegetables by mixing 100g shredded cabbage, 1 large julienned carrot, and 1 small sliced cucumber. Dress with 2 tbsp soy sauce and 1 tbsp white vinegar.

Punch down the dough, then divide into 8 equal pieces. Roll each piece into a ball, flatten it, and fold over into a semi-circle. Place on a parchment-lined tray, cover, and let rise for an additional 30 minutes.

In a deep pan, preheat oil to 350°F (175°C). Coat the marinated chicken with 200g all-purpose flour and fry until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.
