  • 200 grams Digestive biscuits (or graham crackers)
  • 100 grams Unsalted butter (melted)
  • 400 grams Sweetened condensed milk
  • 300 milliliters Heavy cream
  • 3 whole Bananas
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 20 grams Dark chocolate (for garnish)

Directions

Step 1

Prepare the base by crushing the digestive biscuits (or graham crackers) into fine crumbs. Use a food processor for ease, or place the biscuits in a sealed bag and smash with a rolling pin.

Step 2

Melt the unsalted butter in the microwave or on the stovetop, then mix it thoroughly with the biscuit crumbs.

Step 3

Press the biscuit mixture firmly into the base and slightly up the sides of a 20cm (8-inch) springform or tart tin. Refrigerate for at least 20 minutes to set.

To make the caramel, pour the sweetened condensed milk into a saucepan. Heat gently on low, stirring continuously, for about 35 minutes until it thickens and turns a golden caramel color. Be careful not to let it burn.
