Ingredients

  • 6 pieces pork sausages (or preferred variety)
  • 2 pounds yellow potatoes
  • 4 tablespoons unsalted butter
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 0.5 cup beef or chicken stock
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Peel and cube the potatoes into even pieces. Place them in a large pot, cover with cold water, and add 1 teaspoon of salt.

Step 2

Bring the pot of potatoes to a boil over medium-high heat. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

While the potatoes cook, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook for 10-12 minutes, turning occasionally, until browned and fully cooked. Remove the sausages from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil. Stir in the sliced onions and a pinch of salt. Cook over medium-low heat, stirring occasionally, for 10 minutes until softened.
