Ingredients

  • 8 pork sausages
  • 2 tablespoons olive oil
  • 2 pounds potatoes
  • 4 tablespoons butter
  • 0.5 cups milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium onions
  • 1.5 cups beef stock
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon Worcestershire sauce

Directions

Step 1

Peel and chop the potatoes into roughly equal pieces. Place them in a large saucepan and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15-20 minutes or until tender when pierced with a fork.

Step 2

While the potatoes are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sausages and cook, turning frequently, until they are browned on all sides and cooked through, about 15-20 minutes. Once cooked, remove the sausages from the skillet and keep warm.

Step 3

In the same skillet, add the onions. Cook over medium heat until they are soft and golden brown, about 8-10 minutes.

Step 4

In a small bowl, mix the cornstarch and water until smooth. Add this mixture to the skillet along with the beef stock and Worcestershire sauce. Stir continuously and bring to a simmer, allowing the gravy to thicken for about 5 minutes. Season with salt and pepper to taste.

Once the potatoes are cooked, drain them and return them to the saucepan. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
