Ingredients

  • 2 pieces Chicken breast (boneless, skinless)
  • 1 teaspoon Salt
  • 3 slices Ginger (sliced)
  • 2 stalks Scallions (white parts)
  • 1 whole Cucumber
  • 1 large Carrot
  • 2 tablespoons Sesame paste (tahini can be substituted)
  • 1.5 tablespoons Soy sauce
  • 2 tablespoons Chili oil
  • 1 tablespoon Black vinegar
  • 1 teaspoon Sugar
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Szechuan peppercorn
  • 1 teaspoon Toasted sesame seeds
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Place the chicken breasts in a pot of water. Add the salt, sliced ginger, and scallion stalks to the water.

Bring the water to a boil, then reduce the heat to low and simmer for 12-15 minutes, or until the chicken is cooked through.

Remove the chicken from the pot and allow it to cool. Once cool, shred the chicken into thin strips using your hands or a fork.
