Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 large Bananas
  • 1 cup Orange juice
  • 1 tbsp Orange zest
  • 2 tbsp Honey
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 1 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Season the pork tenderloin with salt and black pepper on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat.

Step 3

Sear the pork tenderloin for 3-4 minutes per side, until browned. Remove from the skillet and set aside.

Step 4

Peel the bananas and slice them diagonally into 1-inch thick pieces.

Step 5

In the same skillet, reduce the heat to medium and add the orange juice, orange zest, and honey. Stir to combine and bring to a gentle simmer.

Step 6

In a small bowl, mix the cornstarch and water to make a slurry. Gradually whisk the slurry into the skillet to thicken the sauce.

Step 7

Add the bananas to the skillet and cook for 2-3 minutes, spooning the orange sauce over them carefully to avoid breaking the slices.

Step 8

Return the pork tenderloin to the skillet, nestling it among the bananas. Cover and simmer on low heat for 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Step 9

Remove the pork from the skillet and let it rest for 5 minutes before slicing into medallions.

Step 10

Serve the sliced pork medallions with the bananas and orange sauce spooned over the top. Garnish with fresh parsley if desired.
