Ingredients

  • 2 large Banana
  • 1.5 cups Pineapple chunks (fresh or canned, drained)
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 4 large Egg yolks
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Ground nutmeg
  • 0.5 cup Rum or bourbon (optional)
  • 1 cup Ice cubes
  • 0 Whipped cream (for garnish)
  • 0 Cinnamon stick (for garnish)

Directions

Step 1

Peel the bananas and add them to a blender along with the pineapple chunks. Blend until smooth and set aside.

Step 2

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium-low heat until the mixture is warm but not boiling.

Step 3

Meanwhile, in a mixing bowl, whisk together the egg yolks and sugar until thick and pale yellow in color.

Step 4

Slowly pour a small amount of the warm milk mixture into the egg yolks while whisking constantly to temper them (this prevents the eggs from scrambling).

Gradually pour the tempered egg mixture back into the saucepan with the remaining milk mixture, stirring constantly.
