Ingredients

  • 8 pieces Banana peppers
  • 2 cups Sauerkraut
  • 1 small Onion
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Caraway seeds
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Cheese (optional, for topping)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Rinse and pat dry the banana peppers. Cut off the tops and remove the seeds and membranes using a small spoon, being careful not to tear the peppers.

Step 3

Finely chop the onion and garlic.

Step 4

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until they are soft and translucent, about 5 minutes.

Stir in the sauerkraut, caraway seeds, paprika, salt, and black pepper. Cook for another 3-4 minutes, stirring occasionally, until the mixture is well combined and heated through. Remove from heat and let it cool slightly.

Stuff each banana pepper with the sauerkraut mixture, pressing gently to ensure they are evenly filled. Arrange the stuffed peppers in a baking dish.

If desired, sprinkle grated cheese over the tops of the stuffed peppers.

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 5 minutes to allow the tops to brown slightly or the cheese to melt.
