Ingredients

  • 3 Ripe bananas
  • 100 g Granulated sugar
  • 50 g Brown sugar
  • 75 g Unsalted butter, melted
  • 2 Eggs
  • 2 tsp Vanilla extract
  • 200 g All-purpose flour
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.25 tsp Salt
  • 60 ml Milk
  • 100 g Granola
  • 2 tbsp Honey

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners.

Step 2

In a large bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 3

Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract to the bowl. Mix until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined. Do not overmix.

Divide the batter evenly into the muffin liners, filling each about 3/4 full.

In a small bowl, combine the granola and honey. Stir until the granola is evenly coated.
