Ingredients

  • 3 whole ripe bananas
  • 0.5 cup honey
  • 0.25 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 whole large eggs
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 3

Add the honey, melted butter, vanilla extract, eggs, and milk to the mashed bananas. Whisk together until well combined.

Step 4

In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula or wooden spoon until just combined. Avoid overmixing to keep the muffins tender.

Step 6

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store in an airtight container for up to 3 days.
