Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 2 large Eggs
  • 2 tablespoons Butter, melted
  • 1 tablespoon Granulated sugar
  • 0.25 teaspoon Salt
  • 3 medium Ripe bananas
  • 0.5 cup Brown sugar
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Dark rum
  • 0.25 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 0 Powdered sugar (optional, for garnish)

Directions

Step 1

In a mixing bowl, whisk together the all-purpose flour, milk, eggs, melted butter, granulated sugar, and salt until smooth. Let the batter rest for 10 minutes.

Step 2

Heat a nonstick skillet or crepe pan over medium heat and lightly grease with butter.

Step 3

Pour about 1/4 cup of crepe batter into the pan, swirling it to evenly coat the bottom. Cook for 1-2 minutes until the edges begin to lift, then flip and cook for another 30 seconds. Transfer to a plate and repeat with the remaining batter. Stack the crepes and cover them with a towel to keep warm.

Step 4

Peel the bananas and slice them into thin rounds. Set aside.

Step 5

For the sauce, melt the unsalted butter in a medium saucepan over medium heat. Stir in the brown sugar and cook until it dissolves and starts to bubble, about 2 minutes.

Step 6

Carefully add the dark rum, stirring constantly. Cook for another minute to let the alcohol cook off.

Step 7

Stir in the heavy cream and vanilla extract until the sauce is smooth. Remove from heat.

Step 8

To assemble, place a few banana slices on each crepe and fold or roll them up. Drizzle the warm brown sugar rum sauce over the crepes.

Step 9

Optional: Dust with powdered sugar before serving.
