Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 cup water
  • 2 medium ripe bananas
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.125 teaspoon salt
  • 1 tablespoon honey or maple syrup (optional)
  • 2 tablespoons chopped walnuts or pecans (optional topping)
  • 0.5 medium sliced banana (optional topping)

Directions

Step 1

In a medium saucepan, combine the rolled oats, milk, water, and salt. Place over medium heat and stir to combine.

Step 2

Peel and mash one of the bananas using a fork until smooth. Add the mashed banana to the saucepan with the oats.

Step 3

Bring the mixture to a gentle simmer and cook, stirring occasionally, for about 8-10 minutes or until the oats are soft and the mixture has thickened to your desired consistency.

Step 4

Once the oatmeal is cooked, stir in the vanilla extract, ground cinnamon, and honey or maple syrup (if using). Taste and adjust sweetness, if needed.

Step 5

Divide the oatmeal into two serving bowls.

Step 6

Peel and slice the remaining banana. Top each bowl of oatmeal with banana slices, a sprinkle of chopped nuts if desired, and a dash of cinnamon for garnish.

Step 7

Serve warm and enjoy your wholesome Banana Cream Oatmeal!
