Ingredients

  • 2 pieces Ripe bananas
  • 0.5 cups Unsalted butter
  • 0.75 cups Brown sugar
  • 1 teaspoons Vanilla extract
  • 1.25 cups All-purpose flour
  • 1.5 cups Old-fashioned rolled oats
  • 1 teaspoons Ground cinnamon
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.75 cups Semi-sweet chocolate chips
  • 0.5 cups Chopped nuts (optional, such as walnuts or pecans)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Step 3

Melt the unsalted butter and add it to the mashed bananas. Stir in the brown sugar and vanilla extract until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, rolled oats, ground cinnamon, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Fold in the semi-sweet chocolate chips and, if using, the chopped nuts.

Step 7

Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 8

Bake in the preheated oven for 10 to 12 minutes, or until the edges of the cookies are golden brown but the centers remain soft.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
