Ingredients

  • 400 grams Egg noodles
  • 2 tablespoons Vegetable oil
  • 250 grams Chicken breast (or shrimp, tofu, or beef – your choice of protein)
  • 3 units Garlic cloves, minced
  • 2 units Shallots, thinly sliced
  • 1 unit Carrot, julienned
  • 150 grams Cabbage, shredded
  • 3 tablespoons Soy sauce
  • 2 tablespoons Sweet soy sauce (kecap manis)
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Chili paste (sambal oelek)
  • 2 units Eggs
  • 2 stalks Green onions, chopped
  • 100 grams Bean sprouts (optional)
  • 4 units Lime wedges (for serving)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Bring a large pot of water to a boil and cook the egg noodles according to the package instructions. Drain the noodles and rinse them briefly under cold water to stop the cooking process. Set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the chicken (or your protein choice) and stir-fry until fully cooked and browned, about 5-7 minutes. Remove the protein from the pan and set aside.

Step 3

In the same wok, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and sliced shallots, and stir-fry until fragrant, about 1-2 minutes.

Return the cooked protein to the wok. Stir in the soy sauce, sweet soy sauce (kecap manis), oyster sauce, and chili paste (sambal oelek). Mix well to coat all ingredients evenly.

Add the cooked noodles to the wok and toss to combine everything thoroughly. Stir-fry for another 2-3 minutes to heat the noodles through and allow the flavors to meld.

Add the chopped green onions and bean sprouts (if using), and stir-fry for an additional 1 minute.

Season with salt and black pepper to taste. Remove the wok from the heat.
