Directions

Step 1

Peel the potatoes and cut them into 1/4-inch thick sticks. Aim for uniform size to ensure even cooking.

Rinse the cut potatoes under cold water to remove excess starch, then soak them in a large bowl of cold water for at least 30 minutes, or up to 2 hours. This helps to achieve crispiness.

Step 3

Drain the potatoes and pat them completely dry using a clean kitchen towel or paper towels.

Step 4

Heat the vegetable oil in a large, deep pot or Dutch oven to 325°F (160°C) using a thermometer to monitor the temperature.

Working in small batches, carefully lower the dried potatoes into the hot oil. Fry for 4–5 minutes, or until they are pale and softened but not browned. Use a slotted spoon to transfer them onto a baking sheet lined with paper towels.
