Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 6 cups Mixed salad greens
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 1 large Avocado
  • 3 tablespoons Balsamic vinegar
  • 4 tablespoons Extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil (for cooking)

Directions

Step 1

Season the chicken breasts with a pinch of salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts for 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for 5 minutes before slicing into strips.
