Ingredients

  • 1 ball (12-inch crust) Pizza dough
  • 2 cups Cherry tomatoes
  • 2 tablespoons Balsamic vinegar
  • 3 tablespoons Olive oil
  • 3 cloves Fresh garlic cloves
  • 1.5 cups (shredded) Mozzarella cheese
  • 0.5 cups (grated) Parmesan cheese
  • 0.5 cups (chopped) Walnuts
  • 10 leaves Fresh basil leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon (for dusting) Cornmeal or flour

Directions

Step 1

Preheat your oven to 475°F (245°C). Place a pizza stone or baking sheet in the oven to heat while you prepare the pizza.

Step 2

In a medium bowl, combine the cherry tomatoes (halved), balsamic vinegar, 1 tablespoon of olive oil, salt, and pepper. Let them marinate for 10 minutes.

Step 3

Place the garlic cloves (unpeeled) on a small piece of foil. Drizzle with 1 tablespoon of olive oil, wrap them tightly, and roast in the oven for 10 minutes until soft. Once cooled slightly, squeeze the roasted garlic out of their skins and mash into a paste.

On a lightly floured surface, stretch or roll out the pizza dough to a 12-inch circle. Sprinkle cornmeal or flour on a pizza peel or the backside of a baking sheet to prevent sticking, then transfer the dough onto it.

Spread the roasted garlic paste evenly over the pizza dough. Sprinkle the shredded mozzarella cheese followed by the grated Parmesan cheese.

Step 6

Drain the marinated tomatoes and scatter them over the pizza. Top with the chopped walnuts for crunch.

Carefully slide the pizza onto the preheated stone or baking sheet in the oven. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbling.

Step 8

Remove the pizza from the oven and let it cool for 2 minutes. Garnish with fresh basil leaves and drizzle with a little olive oil if desired.

Slice and serve immediately!
