Ingredients

  • 1 whole Garlic bulb
  • 6 tablespoons Olive oil
  • 3 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Water (optional, for thinning)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Slice off the top of the garlic bulb, exposing the tops of the cloves. Drizzle 1 tablespoon of olive oil over the garlic and wrap it in aluminum foil.

Step 3

Roast the garlic in the preheated oven for 35-40 minutes, or until the cloves are soft and golden brown. Let it cool to room temperature.

Step 4

Squeeze the roasted garlic cloves out of their skins into a blender or food processor.

Step 5

Add the balsamic vinegar, honey, Dijon mustard, salt, and black pepper to the blender.

Step 6

Blend the mixture while slowly drizzling in the remaining 5 tablespoons of olive oil until the vinaigrette is smooth and emulsified.

Step 7

If the vinaigrette is too thick, add 1 tablespoon of water and blend again to reach your desired consistency.

Step 8

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 9

Transfer the vinaigrette to a jar or airtight container and store in the refrigerator for up to 1 week. Shake well before each use.
