Ingredients

  • 1 4-5 lbs Whole duck
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 cup Balsamic vinegar
  • 0.5 cup Orange juice
  • 1 orange Zest of an orange
  • 0.25 cup Honey
  • 0.25 cup Maple syrup
  • 1 tablespoon Soy sauce
  • 2 tablespoons Butter
  • 4 sprigs Fresh thyme

Directions

Step 1

Preheat your oven to 375°F (190°C). Pat the duck dry with paper towels and trim any excess fat from the cavity and neck area.

Step 2

Season the duck inside and out with salt, black pepper, and garlic powder. Prick the skin of the duck all over with a sharp knife or skewer, being careful not to pierce the meat. This will help render the fat during cooking.

Step 3

Place the duck on a roasting rack inside a roasting pan, breast side up. Tuck the wing tips under the duck to protect them from burning.

Step 4

Roast the duck in the preheated oven for 90 minutes. Every 30 minutes, carefully spoon out excess fat from the roasting pan and baste the duck with its own fat to keep the skin crispy.

Step 5

While the duck is roasting, prepare the glaze. In a medium saucepan, combine balsamic vinegar, orange juice, orange zest, honey, maple syrup, soy sauce, and butter. Place the saucepan over medium heat and bring the mixture to a simmer.

Step 6

Let the glaze cook for 8-10 minutes, stirring frequently, until it thickens slightly. Remove from heat and set aside to cool slightly.

Step 7

After 90 minutes of roasting, increase the oven temperature to 425°F (220°C). Brush the duck generously with the prepared glaze.

Step 8

Return the duck to the oven and roast for an additional 20-30 minutes, basting with more glaze every 10 minutes, until the skin is caramelized and sticky, and the internal temperature of the duck at the thickest part of the breast reaches 165°F (74°C).

Step 9

Let the roasted duck rest for 15 minutes before carving. This allows the juices to redistribute and ensures moist, flavorful meat.

Step 10

Garnish with fresh thyme sprigs and serve with your favorite sides. Drizzle any remaining glaze over the carved duck for added flavor.
