Ingredients

  • 1 package (approximately 8 oz, thawed) Puff pastry sheets
  • 3 medium Yellow onions
  • 2 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Brown sugar
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 ounces Goat cheese
  • 1 teaspoon Fresh thyme leaves
  • 1 large Egg
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel and thinly slice the yellow onions.

Step 3

In a large skillet over medium heat, warm the olive oil. Add the sliced onions and sauté for 10-12 minutes, stirring occasionally, until they become soft and translucent.

Stir in the balsamic vinegar, brown sugar, salt, and black pepper. Cook for another 5-7 minutes, stirring frequently, until the onions are caramelized and the mixture thickens. Remove the skillet from heat and let cool slightly.

On a lightly floured surface, roll out the thawed puff pastry sheet to smooth it out, if needed. Using a 2.5-inch round cookie cutter, cut out 12 circles from the pastry.

Place the pastry circles on the prepared baking sheet, spacing them about 1 inch apart.

In a small bowl, whisk together the egg and water to create an egg wash. Lightly brush the edges of each pastry circle with the egg wash.
