Ingredients

  • 2 large red onions
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 200 grams cheddar cheese (or any semi-firm cheese of choice)
  • 1 teaspoon fresh thyme leaves (optional, for garnish)
  • 20 pieces small skewers or toothpicks

Directions

Step 1

Peel and thinly slice the red onions into even half-moon slices.

Step 2

Heat a medium skillet over medium heat and add the olive oil.

Step 3

Add the sliced onions to the skillet and sauté for 5 minutes until softened.

Step 4

Stir in the balsamic vinegar, brown sugar, salt, and black pepper. Reduce the heat to low and cook the onions for 15-20 minutes, stirring occasionally, until they are caramelized and syrupy. Remove from heat and let cool slightly.

Step 5

Meanwhile, cut the cheddar cheese into 1-inch cubes. You will need about 20 pieces for this recipe.

Step 6

To assemble, take a skewer or toothpick and thread one cube of cheese followed by a small portion of the balsamic onion mixture. Repeat for all skewers.

Step 7

Arrange the skewers on a serving platter. Garnish with a sprinkle of fresh thyme leaves if desired.

Step 8

Serve immediately as an appetizer. Enjoy!
