Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 large Yellow onion
  • 2 tbsp Unsalted butter
  • 1 tbsp Brown sugar
  • 1/3 cup Balsamic vinegar
  • 1/4 cup Chicken or vegetable broth
  • 1 tsp Fresh thyme
  • 2 cloves Garlic

Directions

Step 1

Trim the pork tenderloin of any excess fat or silver skin. Slice it into 1-inch thick medallions. Season both sides of the medallions with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the pork medallions for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter to the same skillet.

Step 4

Peel and thinly slice the onions. Add them to the skillet, stirring occasionally. Allow the onions to cook slowly for 10-12 minutes until they are golden and caramelized.

Step 5

Add the brown sugar and minced garlic to the onions. Cook for an additional 1-2 minutes while stirring to combine.

Step 6

Pour in the balsamic vinegar and broth, scraping the bottom of the pan with a wooden spoon to deglaze. Stir in the fresh thyme.

Step 7

Return the pork medallions to the skillet, nestling them into the onion mixture. Reduce the heat to low and simmer for 5-7 minutes, or until the pork is cooked through and the balsamic glaze has thickened slightly.

Step 8

Taste the sauce and adjust the seasoning with additional salt and pepper, if needed.

Step 9

Serve the balsamic glazed pork medallions hot, topped with the caramelized onions and sauce. Pair with mashed potatoes, roasted vegetables, or a simple salad.
