Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 0.5 cups Balsamic vinegar
  • 2 tablespoons Honey
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 4 ounces Goat cheese (soft)
  • 2 cups Mixed greens or arugula
  • 4 pieces Whole wheat or brioche sandwich buns
  • 1 tablespoon Unsalted butter

Directions

Step 1

Preheat your skillet or grill pan over medium heat.

Step 2

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 3

Add olive oil to the pan and sear the chicken breasts for 5–6 minutes on each side until they are golden brown and fully cooked (internal temperature of 165°F). Remove and set aside to rest for a few minutes.

Step 4

In the same pan, reduce heat to medium-low and pour in the balsamic vinegar and honey, scraping up any browned bits from the chicken. Stir and let the mixture simmer for 5–7 minutes until it thickens into a glaze.

Step 5

Return the chicken breasts to the pan, turning them over to coat evenly in the balsamic glaze. Remove from heat.

Step 6

Slice the sandwich buns and lightly butter the inside halves. Toast them on a skillet or grill pan until golden and crisp.

Step 7

Spread goat cheese on the bottom halves of the toasted buns.

Step 8

Place a glazed chicken breast on top of the goat cheese, followed by a handful of mixed greens or arugula.

Step 9

Cap with the top bun and serve immediately.
